standardize on hubExamples for example data

this would involve:

• removing the data-raw and data folders and github workflows related to updating data in those folders
• updating any examples specified in roxygen function documentation to use data sets from hubExamples as necessary
• updating the vignette to use data sets from hubExamples as necessary. It may make sense to hold off on doing this until the next iteration on the vignette (based on the in-progress manuscript) is in place.
