I had the same issue. In https://stackoverflow.com/questions/62860545/instantiation-of-chaincode-using-fabric-node-sdk-gives-api-error-404-manifest it says that the latest-tag isn't available anymore.

I'm not a pro in this but I solved it more or less by changing the CA_TAG and the FABRIC_TAG in the docker-images.sh file from latest to 1.4.8. After that I could run the program but got a lot of WARN-Messages, don't know what they mean and how to handle them but at least it works...
