Before the v6.0.0 version is released we need to:

Update Breaking_Changes.md
Enable Winget workflow
Enable Homebrew workflow (update formula to use dotnet, remove the workaround for osxarm64)
Enable Docs workflow
Update schemastore to point to the gitversion.net
DockerHub Readme is updated
