Responses with JSON payloads should have header Content-Type specified to "application/json"

@AnsonT Did you get any feedback on this issue?
If the maintainers are ok with that then I can implement it, after my PR #83 is merged because it would introduce conflicts.

@rsp I didn't get any additional feedback, but it just seems like a bug to me.
