Forcing GTK3 + Quartz is unnecessary on macOS, X11 works as well #7054

Edited: I figured out what I was doing wrong, and now the binary of Rawtherapee starts normally when built against GTK3 + x11.

So it is not needed to be forced, but can be made a configure option.
