<h1>Introduction</h1>
<p>Cheese is a dairy product, but also contains coagulants, substances that change liquids to solids or semi-solids; flavourings such as herbs, spices, hot and sweet peppers, horseradish, port wine; and different bacterial culture - all of which each create its own distinct taste. Cheese is produced in a wide range of flavors, textures and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. During production, the milk is usually acidified and adding the enzymes of rennet (or bacterial enzymes with similar activity) causes the milk proteins (casein) to coagulate. The solids (curd) are separated from the liquid (whey) and pressed into final form. Some cheeses have aromatic molds on the rind, the outer layer, or throughout. Most cheeses melt at cooking temperature.</p>

<p>Over a thousand types of cheese exist and are currently produced in various countries. Their styles, textures and flavors depend on the origin of the milk (including the animal's diet), whether they have been pasteurized, the butterfat content, the bacteria and mold, the processing, and how long they have been aged for. Herbs, spices, or wood smoke may be used as flavoring agents. The yellow to red color of many cheeses is produced by adding annatto. Other ingredients may be added to some cheeses, such as black pepper, garlic, chives or cranberries. A cheesemonger, or specialist seller of cheeses, may have expertise with selecting the cheeses, purchasing, receiving, storing and ripening them.</p>

<h1>Types of Cheese</h1>

<h2>Firm and semi-firm</h2>

<p>Semi-firm cheeses are uncooked and pressed, dense cheeses that are usually pale yellow. This includes Cheddar, Gouda, and Monterey Jack cheese. Firm cheeses are cooked and pressed cheeses. This type of cheese is very compact and firm. Some examples are Parmesan, Raclette, and Romano cheese.</p>

<h2>Blue-veined</h2>

<p>Blue-veined cheeses are neither cooked nor pressed, but rather treated with blue-green mold. This mold is injected into the cheese via a long needle. Danish Blue, Roquefort, and Stilton cheese are all blue-veined cheeses, which have a strong, peppery flavour and they usually have a crumbly texture.</p>

<p>Soft cheese are not cooked or pressed. It is also ripened for a short period of time before being drained. These cheeses have a moisture content of about 50% to 60% and about a quarter of their weight is fat. However, these cheeses tend to lose flavour when heated. Examples are the Munster, Brie, and Camembert cheeses.</p>

<p>Fresh cheese, also called unripened cheese, do not have rennet. Instead, the cheese is coagulated during lactic acid fermentation in the milk. When drained of whey, they are not ripened or fermented. This type of cheese is mainly used for baking and desserts. Examples are Cottage, Ricotta, and Cream Cheese.</p>

<p>Processed cheeses are the salty, elastic-like slices at your local grocery store. They are made from one or several pressed cheeses which are remelted and combined with stabilizers, emulsifiers, salt, colours, sweeteners and seasonings, depending on the end product.</p>
<p>The emulsifiers (typically sodium phosphate, potassium phosphate, tartrate, or citrate) reduce the tendency for tiny fat globules in the cheese to coalesce and pool on the surface.</p>

<h1>History</h1>
<p>It is thought that cheese was first discovered around 8000 BCE around the time when sheep were first domesticated. Rennet, the enzyme used to make cheese, is naturally present in the stomachs of ruminants. The leak-proof stomachs and other bladder-like organs of animals were often put to use to store and transport milk and other liquids. Without refrigeration, warm summer heat in combination with residual rennet in the stomach lining would have naturally curdled the milk to produce the earliest forms of cheese.</p>
<p>The earliest evidence of cheese-making in the archaeological record dates back to 5,500 BCE, in what is now Kujawy, Poland, where strainers with milk fats molecules have been found. The earliest ever discovered preserved cheese was found in the Taklamakan Desert in Xinjiang, China, and it dates back as early as 1615 BCE</p>
<p>These milk curds were strained, and salt was added for extra preservation, giving birth to what we now know as "cheese." Even with the addition of salt, warm climates meant that most cheeses were eaten fresh and made daily. Early Roman texts describe how ancient Romans enjoyed cheese often. They enjoyed a wide variety of cheeses, and cheese making was already considered an art form. They provided hard cheese for the Roman legions.</p>
<p>The word cheese comes from the Latin word caseus, the root of which is traced back to the proto-Indo-European root kwat, meaning to ferment or become sour.</p>
<p>Pasteurization made soft cheeses safer, reducing the risk of spreading tuberculosis, salmonellosis, listeriosis, and brucellosis. Outbreaks still occur from raw milk cheeses, and pregnant women are warned not to eat soft-ripened cheeses and blue-veined cheeses.</p>
<p>With the American industrial food, a revolution came in the invention of processed cheese. Processed cheese combines natural cheese with milk, emulsifiers, stabilizers, flavoring, and coloring. This inexpensive cheese product melts easily and consistently and has become an American favorite. Production of processed cheese products skyrocketed during the World War II era. Since this time, Americans have consistently consumed more processed cheese than natural cheeses.</p>
<h1>Creation of Cheese</h1>

<p>In the basic creation of cheese, there are many steps. The first step in this process is to standardize the milk. This basically means it raises or lowers the fat content of the milk in order to create an optimal protein to fat ratio for a good tasting cheese.</p>

<p>After this, the milk is pasteurized, which improves the environment of the milk for bacterial cultures. The milk is heated to a certain temperature to kill harmful bacteria and organisms. However, there are cheeses made of raw milk which must be aged for at least 60 days to reduce possibility of pathogens which can make you sick.</p>

<p>The milk is then cooled to a temperature of about 32 degrees Celsius for the starter bacterial culture to grow and also allows fermentation. The starters not only produce lactic acid from lactose, but also control the flavour, aroma, alcohol production, and more.</p>

<p>Now, the milk is inoculated with starter and non-starter bacteria and ripened. The bacteria are added to the milk for around 30 minutes to ripen. During this step, the bacteria grow and ferment, lowering the pH level and develops the flavour of the cheese.</p>

<p>Rennet is then added to the inoculated milk. Rennet is an enzyme which acts on the protein of the milk in order to form cheese curds. The mixture is left to sit for about 30 minutes again. In this time, the milk forms a coagulum, which is a mass of solid or semi-solid matter.</p>

<p>The curd is fermented to a pH of about 6.4 and is cut into small pieces, which are then heated to about 38 degrees Celsius, separating the whey from the curd. Whey is the liquid remaining after milk has been curdled and strained. Whey protein is considered a complete protein, as it has all 9 essential amino acids.</p>

<p>After the separation of the whey from the cheese curds, the whey is drained away from the vat, leaving only a curd mat. More liquid is drained to make harder and firmer cheeses, while less liquid is drained to make a softer and looser cheese.</p>

<p>The curd mat is then cheddared. It is first cut into small pieces and then piled upon one another to be periodically flipped. This expels more whey from the cheese, adjusts acidity to a pH level of about 5.1-5.5, adds flavor, and makes the cheese firmer, denser, and sometimes more crumbly. The pieces are then cut into even smaller pieces.</p>

<p>Depending on the desired cheese, the cheese is either salted with dry salt or placed in brine. For example, for cheddar cheese, the smaller pieces are put back in the vault and are sprinkled with dry salt. For mozzarella cheese, loaves are formed from the curds and are put in a brine solution.</p>

<p>The salted pieces are then pressed into blocks inside cheese hoops – round moulds for pressing cheese. Softer cheeses need minimal to no pressing, while hard cheeses need to be pressed with enough weight so that the curds will knit and expel any extra whey.</p>

<p>Finally, the pressed cheese is stored in coolers for a specific amount of time, depending on what is desired. Depending on the type of it, the cheese can be stored for many months to even many years. This allows the cheese to develop its appearance, texture, flavour, and other qualities.</p>

<li>Heat your oven to 350°F (180°C). Lightly butter a 2-quart (2 L) baking dish.</li>
<li>Cook the macaroni in boiling salted water until tender. Drain and rinse.</li>
<li>In a large saucepan, heat the oil over medium heat. Add the sausages and cook until lightly browned, about 5 minutes. Transfer to a plate and set aside.</li>
<li>To make the sauce, make a cut in half the onion about 1 inch (2.5 cm) deep, and slide a bay leaf into the slit. Stick the garlic cloves into the onion.</li>
<li>In a large saucepan, combine the milk and onion, heat over medium heat. Meanwhile, in a second saucepan, melt the butter over low heat. Add the flour and cook the roux, stirring, for 3 minutes. Do not let it colour. Remove from heat. Pour some hot milk into the roux, stirring until the milk is thoroughly blended in. Stir the mixture into the remaining milk and simmer, stirring frequently for 15 minutes. Season with salt and pepper.</li>
<li>Remove the onions. Add the cheese, paprika and the mustard. Continue cooking over low heat, stirring until the cheese is melted. Add the macaroni and sausage; stir together well. Season well with salt and pepper. Transfer to the prepared baking dish.</li>

<li>Heat the olive oil in a pot over medium heat. Add the garlic and onions and saute until starting to soften, 3 to 4 minutes. Add the ground beef and sausage and cook until browned. Drain off almost all of the fat, leaving a bit behind for flavor and moisture. Add the tomato sauce, tomatoes, Italian seasoning, red pepper flakes and some salt and pepper. Stir, bring to a simmer and simmer for 25 to 30 minutes. Remove 3 to 4 cups of the cooked sauce to a bowl to cool down.</li>
<li>Bring a large pot of water to a boil and add some salt. Cook the ziti until not quite al dente.</li>
<li>Preheat the oven to 375ºF.</li>
<li>In a bowl, mix 2 cups of the grated mozzarella, the ricotta, Parmesan, parsley, eggs and some salt and pepper. Stir together just a couple of times (do not mix completely).</li>
<li>Drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour it into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps). Add the cooled reserved meat sauce and toss to combine.</li>
<li>Add half the coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella. Repeat with another layer of the coated pasta and the remaining sauce and mozzarella.</li>
<li>Bake until bubbling, about 20 minutes. Let stand 5 minutes before sprinkling with chopped parsley to serve.</li>

<li>1 medium onion, finely chopped</li>
<li>1 tsp garlic, chopped</li>
<li>½ cup Gorgonzola cheese, crumbled</li>
<li>1 ½ cups chicken stock or water</li>
<li>3 cups heavy cream</li>
<li>4 Tbsp parsley, chopped</li>
<li>Kosher salt</li>
<li>Black pepper</li>
<li>Extra virgin olive oil</li>

<ol>
<li>Place potatoes in a large pot and cover with cold salted water.</li>
<li>Bring to a boil, lower heat to a simmer, and cook for about 15 minutes, until potatoes are cooked but still firm.</li>
<li>Drain potatoes and transfer to a baking sheet to cool.</li>
<li>Once cooled, pass potatoes through a food mill or ricer into a large bowl.</li>
<li>In a second bowl, stir together the semolina flour and 2 cups of the all-purpose flour; reserve additional 1 cup of all-purpose flour for dusting.</li>
<li>Pour the semolina mixture into the bowl with the potatoes and stir until fully combined.</li>
<li>Transfer dough to a cutting board and form into a large 3-inch thick loaf; let dough rest for 10 minutes.</li>
<li>To cook the gnocchi, bring a large pot of salted water to boil.</li>
<li>Slice loaf into 1-inch slices.</li>
<li>Dust a cutting board with the reserved all-purpose flour and roll dough into ½-inch thick logs.</li>
<li>Cutting on a bias, slice the log into ½-inch pieces and transfer gnocchi onto a well-floured baking sheet.</li>
<li>Repeat with remaining dough.</li>
<li>Working in batches, drop gnocchi into the boiling water to cook for 3 minutes, or until gnocchi floats to the top.</li>
<li>Using a slotted spoon, transfer gnocchi to an oiled baking sheet to cool; repeat process with remaining dough.</li>
</ol>
<li style="list-style: none; font-weight: bold;">Gorgonzola Cream Sauce</li>
<ol>
<li>To make sauce, stir and cook onions and garlic with 2 to 3 tablespoons of oil over medium heat until onions soften.</li>
<li>Add Gorgonzola cheese and continue cooking while stirring until cheese is starts to melt.</li>
<li>Stir in chicken stock and cream.</li>
<li>Bring mixture to a boil and simmer for 5 minutes, until cheese is melted and sauce begins to thicken.</li>
<li>Add cooled gnocchi to the sauce and continue to simmer until gnocchi are hot and sauce has thickened enough to coat the dumplings.</li>
<li>Add salt and pepper, to taste.</li>
<li>Garnish with parsley and serve.</li>
