Even if the cursor disappears for me, it is still visible when screen sharing in Discord. I'm not sure if this is a missing feature for this program or Discord (or if it's intended).

I have no idea how Discord's screen share works. It could be that they artificially draw a cursor on top. Either way, I would boldly assume that there's nothing we can or want to do about this, unless Xfixes has some crazy flag we can set that I don't know about. :-)

Maybe it's worth investigating how unclutter works with other similar services (Zoom, Jitsi, Nextcloud etc.)?

Be my guest. :-)

I tried Discord, Jitsi, MS Teams and Zoom and it didn't work for any of them. I tried both single application and whole desktop. I wanted to try Skype and Nextcloud, but Skype wouldn't install on my friend's PC (Snap sucks) and I don't have a Nextcloud server.

Thanks for trying out a few different ones – I think an exhaustive list isn't necessary. The common denominator here is that they all behave the same. This may well just have to do with how Xfixes works, and is intended to work, but I really don't know and don't really feel like reading specifications for it either. If someone really feels like punishing themselves with digging into the world of X they can go and see if there's something to be done, and I'll happily leave this issue open, but I won't have time (nor the mood :-)) to do it myself, sorry. :-)
