The observed by you behavior is a major issue with our mechanism for applying the Themes. That issue was introduced with the Creators Update. It has been logged to Microsoft and unfortunately until they do not fix it currently I cannot suggest you any possible solution.

Setting RequestedTheme on RadDataGrid to "Light" has no effect, grid is still black. Is there some custom theming, how we should change themes?
