Update PetClinit workshop to have the option of using Zero-Config and standard instrumentation steps #218

I noticed that the PetClinic workshop has been updated to use only Zero-Config instrumentation. I was wandering if there can be two options available - one with zero-config and one without?
This will help demonstrate how the Java instrumentation works, and then build up on that by demonstrating how Zero-config removes some of the set up steps.
It should be optional whether to run one, the other, or both as part of the workshop.

@khymers-splunk This requirement would mean installing the OTel Collector with/without instrumentation. This means if you installed the collector with, we would have to uninstall it and re-install to do without.
