Make a watch app that syncs chats to phone and allows you to use it like the WhatsApp app. Alternatively, an entire port that does not require a phone, however, that would probably be a much larger project.

The basic UI for the app that syncs could be a list of all the chats, and clicking into it takes you into a chat. Like the messages app on the Pixel Watch 2.
