The way GTK 2.0 works my own settings in ~/.gtkrc-2.0 are overridden by /usr/share/themes/Greybird/gtk-2.0/gtkrc which makes reenabling Always underline mnemonics/shortcuts via gtk-auto-mnemonic = 0 impossible.
I've edited
/usr/share/themes/Greybird-dark/gtk-2.0/gtkrc
to have my "ugly" mnemonics back but I'm not a fan of this solution.

gtk-auto-mnemonics = 0
has been effectively disabled, see: https://unix.stackexchange.com/questions/212470/enabling-alt-hotkeys-for-buttons-in-gnomeso,
gtk-auto-mnemonics = 1
can be removed fromGreybird/gtk-3.0/settings.ini
