[EIP-1193] Update docs to reflect the new provider flow

Context / issue

As we plan to release a version with major changes on how to initialize the protocol-kit we need to make sure that all the docs are updated accordingly.

We should also document the breaking changes specifically so we allow a smooth transition for developers.

Proposed solution

• Review the safe-docs.
• Detect the breaking changes.
• Add a migration guide.
• Create a release message.
• Publish a version.
