Jekyll Build failing with invalid byte sequence in US-ASCII

Summary

I tried to build my template repository in Vercel. It works both locally and in GitHub pages. When I try to build it in Vercel, it fails with error:

Liquid Exception: invalid byte sequence in US-ASCII in /vercel/path0/_posts/en-us/2023-07-12-post-bibliography.md

I already set the environment variables to:

LANG=en_US.UTF-8
LANGUAGE=en_US:en_US.UTF-8
LC_ALL=en_US.UTF-8

What else can I try to make it work?

Steps to Reproduce

1. Create a project from this repository (or a fork of it)
2. Change build command to bundle exec jekyll build
3. Set these environment variables (or not)

LANG=en_US.UTF-8
LANGUAGE=en_US:en_US.UTF-8
LC_ALL=en_US.UTF-8

4. Build
