How do you calibrate the shield with the AC adapter?

Hello, many thanks for this excellent project.

I'm just setting up my shield with the 9V AC-AC adapter as a reference. How should I do the calibration. I've taken a look at the instructions here however the instructions don't match up with the contents of the arduino scripts.

Do you have any advice for calibration?
