Per-sender notifications cannot be removed

On Android 8, if you happen to choose "Notifications" from particular sender's screen, that particular sender's notifications setting stays there forever. I would like to make it default again. Is it possible to clear that sender from the list? There is no obvious way to do it.

I don't think there's any way to do this besides clearing the app's data. You can't do this with Google Messages either.
