configure emojify-text?

i'd like to echo an arbitrary string that i provide in my code when mouse moves over an emoji. is this possible?

the string isn't the item that is being used, it's descriptive of the action/status the emoji represents. i tried setting both help-echo and emojify-text to no avail, as emojify seems to override them subsequently.
