Why doesn't document symbols window populate until I reopen it the second time?

Here's my config. Document symbols come up empty until I close it and reopen it the second time.

Your LSP server is probably not ready when you first run the command, symbols run asynchronous by default, if you wait long enough for your LSP server to be ready it will populate immediately.

Btw, I personally use fidget.nvim plugin to see when my LSP server is fully ready.

Is there some configuration you need to do to let fzf-lua know lsp is ready from fidget.nvim?

There is no such thing, fidget is just a UI to help you understand when the LSP is ready, when you run fzf-lua in async mode (default for symbols), fzf-lua will open the interface and wait for results, when the LSP is ready the results will start to fill the interface.
