Update Copyright information in emails to reflect the current year #790

Current behavior
The current email templates are using hard coded values for year e.g. this line

To Reproduce
Steps to reproduce the behavior:

Go to User Registration
Enter user details
Click signup
Check confirmation email that is sent to user from step 2
Copyright year has been hard coded to read 2021

Expected behavior
Copyright information should include the current year
