Add explanation of what multi-tenancy is
Add examples for when and why someone would want to use multitenancy

Doc issue created based upon feedback from the Docs mailing list.

If this is not being actively worked on, I wouldn't mind picking it up.

I have some experience working with a multi-tenancy architecture and would happily put it to use here, to give back to the wider community.

If it's being worked on already, then I'll be happy to lend a hand with it too.
