[v4] | [v2] Clarify that stackBehavior prop is not v3 exclusive

Hi there,

I'm creating this issue to clarify that the stackBehavior prop is also available for use in v4 and v5 versions.

In the documentation for stackBehavior prop https://ui.gorhom.dev/components/bottom-sheet/modal/props, it currently states:

stackBehavior: Available only on v3, for now.

This information is incorrect. I have tested and confirmed that the stackBehavior prop works as expected in v4 and v5 as well.

This misinformation led me to spend days trying to create a modal manually, wasting my time. Therefore, it's crucial to rectify this error in the documentation.
