Is your feature request related to a problem? Please describe.
Right now, build.sh only builds x86_64 architecture when built for iOS simulator.

Describe the solution you'd like
By default, it should build for both simulator architectures. Simulator arm64 and Simulator x86_64.

OS and backend
iOS, Apple M1 and Metal
