Is it possible to override any of the file icons to be your own combo of color and icon? I know VSCode hasn't had the same kind of CSS configuration as Atom does but was wondering if there was a way to do so anyway.

Yikes. I am surprised to see this is not possible. Seems there are a number of upvotes on this. I am going to take a look and see if there would be a way to add this... even if it was just a way to point other file extensions to different icons in this icon theme.
