This is the error I get:

I am on as 2010 12-Core Mac Pro with an NVIDIA GTX 1070 8GB and an NVIDIA Quadro K2000. I didn't change any settings, but I did try after I got this error to change a few settings and it just changed which config file it couldn't find, so exact same error otherwise.

Have you set up a pool in preferences?

Are you trying to mine Bitcoin on a Mac Pro? These days it's all specialised ASIC miners, can't really be done on a Mac anymore with any currency using SHA256 algorithm for mining!

I am, but not for profit. I know I shouldn't be doing this, it's really stupid, how do I do it?

It just says no servers could be used now. I have no idea how to set up a pool. I thought I went and created one in settings, but it doesn't seem to have done that.. I also can't give the log since I used credentials I use elsewhere too.

So I have to go make a server to put a pool on? I don't need another wallet, I just... couldn't I just have it stick my Bitcoin into my NiceHash?

There are Bitcoin (or other currency) mining pools you can create an account on. It's been so long I can't recommend you one, I don't know whether there are any that would work with CPU/GPU mining for Bitcoin, though there are definitely some for some other currencies using different algorithms. If you wanted to start your own sever you could use P2Pool, I'm sure there are still instructions for that around. Or look for "solo mining" instructions. But I think the share difficulty would be so high it would look like nothing was happening in the miner, it would be a bit like a lottery ticket with really terrible odds I guess.

Nicehash is a pool, so you'd need an account with them, their server address and your worker username and password to put into MacMiner in the pool settings.

Ah yes, I have NiceHash already.
