Add add_docker_metadata to the Beats configurations

Spinning this off into a separate issue from a PR:

Right now we are using add_cloud_metadata, which doesn't make much sense for this demo since most people are running this locally (I assume). Instead add_docker_metadata would IMO make much more sense.
