undo using u only works once, before going back into insert mode

I'm on the latest version of hammerspoon as well as VimMode.spoon, and currently undo (u) only works once for me before going back into insert mode. I also noticed the same issue with many other actions ctrl+r (redo).

Interestingly I think undo in fallback mode works multiple times though?

Most other commands (such as yank, paste) in fallback normal mode also only work once and then switch to insert mode.
