\section{Louisiana Hot-links and Lentils}
\tip {
Can also be made with Kielbasa, which Noel prefers.
}
\begin{recipe}
\ingredients{
1 & onion \\
& olive oil \\
& kosher salt \\
}
Sauté diced onion in a dutch oven with olive oil and salt until just browned.
\ingredients{
3 & garlic cloves \\
2 & tablespoons paprika \\
4 & hot link sausages \\
}
Slice sausages on the bias and add to the pot, along with garlic and paprika.
\ingredients{
1 & cup green lentils \\
1 & small can crushed tomatoes \\
1\sfrac{1}{2} & cup chicken broth \\
1\sfrac{1}{2} & cup water \\
& fresh thyme \\
& salt \\
}
Add lentils and wet ingredients, bring to a light simmer, and place in a
300\degree oven for 60 minutes, covered.
Remove cover and bake for another 15 minutes, longer if needed until fairly dry.
\ingredients{
1 & bunch scallions \\
1 & lemon \\
1 & loaf french bread \\
& butter \\
}
Slice scallions to use for a garnish. Squeeze a lemon on top for acid.
Just like a soup, bread and butter is a good accompaniment.
