This might be a bit of a stupid question but the Aurelia 1 version of the skeleton had a directory called static where one could put image, etc ... These would then automatically be copied to the dist folder when a build was triggered. I think this was done using the webpack-copy-plugin.
Is there a reason that this was removed in the Aurelia 2 version? Should I just include images in the src directory and webpack will take care of the rest?

It was not "removed".
It is rather a reboot. Since Aurelia 2 was in development stage, we try to have a minimum skeleton so we don't have to maintain too much features, at least before beta release.
