Support for JsonSerializerOptions, JsonTypeInfo and JsonSerializerContext on the mapper

Describe the feature.

Currently the public API of the mapper doesn't allow providing options, type info or serializer context classes when mapping. This makes impossible to override the mapper behavior either globally or per call. Furthermore only by being able to provide these types JsonSerialization Source generation can be used which would improve lambda startup time because there is no overhead anymore due to reflection when mapping types.
