Differing resolution and aspect ratios

my tablet (an ipad) is a higher resolution and different aspect ratio from my monitor.

trying to get the screen to fit properly doesn’t seem to have a simple solution, as getting the right aspect ratio comes at the cost of an unusable resolution, and using the highest resolution, which is still low enough to look really bad on my ipad, gives me either a stretched or cropped mess since my monitor is 21:9

is there any simple way, or any way at all really to just output a completely different resolution to my ipad?

From my experience, not possible. You could use the "Stretch Video" toggle, but that also comes at a cost of the output looking a bit off.
