[Task] Ensure all relevant tracks events for the Payment activity widget are registered correctly.

Register relevant events to track merchant interaction / engagement with the Payment activity widget - e.g. clicks on the View reports, changing currency / date switcher.

Additional context

• Relevant tracker with event name wcpay_overview_payment_activity_click has been added within the widget code via the PR Reporting: Track events for View report links on Payment activity widget #8687, for helping track clicks on the Payment activity widget tiles. The event is yet to be registered in Tracks though.

Clarifying the goal of this issue – ensure all tracks events & props related to the payment overview widget are registered correctly.

Note that the funnels are not required for this issue – they can come later (and may be handled by product team / @souravdebnath1986 ). That said, it's useful context to understand the funnels/analysis when registering the events. 🚀 📈

FYI @nagpai I also updated the title to make the goal clear – this issue should cover any events that need registering. When someone starts work on it they can check what new events need adding or if any existing events' registration info could be improved.
